I've never recorded a call to a land line. Only Skype-to-Skype calls. I used two computers with a mix-minus setup on my mixer. This would also work for land-line calls using Skype Out/Skype In. Radio Shack makes a somewhat inexpensive analog phone line tap that could possible work, as well. I'd also say that you could probably get decent results with a speaker phone, as long as you did a lot of testing to achieve optimum results.
